Paeonia 'Sorbet' is a stunning herbaceous peony that earns its name with a unique, "triple-decker" floral structure that looks like a gourmet dessert. This mid-season bloomer features bomb-style double flowers about 5 to 7 inches wide, characterized by three distinct layers: a base of large pink guard petals, a fluffy middle collar of creamy-white to canary-yellow staminodes, and a top "scoop" of ruffled pink petals. Beyond its visual flair, 'Sorbet' is highly regarded for its intense, sweet fragrance, making it a favorite for both garden sensory appeal and cut flower arrangements.
Growing to a height of 30 to 36 inches, 'Sorbet' forms a compact, well-branched mound of dark green, glossy foliage that remains attractive until the first frost. While its stems are relatively sturdy, the sheer weight of the densely layered blooms, especially when wet from spring showers, typically requires the support of peony rings or staking to prevent them from drooping.
